Score the top of a whole brie, press in a few sprigs of fresh thyme, and bake at 180°C for 12 minutes until the centre wobbles. Spoon a generous tablespoon of Fig & Balsamic Jam over the top and serve immediately with crusty bread or crackers. This takes ten minutes and tastes like you planned it all week.

**Mango & Ginger Chutney** — sharp cheddar, chicken tikka, cold pork, or a simple cheese board. **Tomato & Chilli Relish** — smashed eggs on sourdough, beef burgers, grilled haloumi, pulled pork. **Fig & Balsamic Jam** — baked brie, charcuterie, duck breast, or spread on a warm brioche. **Smoky BBQ Rub** — chicken thighs, pork ribs, cauliflower steaks, or roasted sweet potato.
